You may have childhood memories of taking a turn cranking an ice cream churn on the front porch or picnic table during summer celebrations or family get-togethers. However, ice cream making doesn’t have to be laborious or limited to annual events.

Summer’s Favorite Frozen Treat

Making your own ice cream is also a luscious way to incorporate the season’s fresh fruit flavors. And it gets easy to make when you use your high-powered kitchen blender. No more freezing an ice cream machine container in advance. Making ice cream in a Vitamix™ only takes a minute.

Break Out The Kitchen Blender!

The next time your family screams for ice cream, reach for your kitchen blender and give this delightful vanilla and cherry recipe a try. This recipe uses non-dairy milk for those with dairy allergies and sensitivities. So this isn’t a traditional ice cream recipe or method of making, but your taste buds will find a bowl of this soft-serve creamy treat ever so sweet.

Fresh cherries are in season. Hooray! Whip out your blender and give this cool, sweet treat a try.

Chunky Cherry Vanilla “Ice Cream”

Classic vanilla goodness loaded with fresh succulent chunks of fresh cherries. Yield: about 4 cups ¼ cup raw cashews, unsalted ¾ cup almond or coconut milk ¼ cup extra virgin coconut oil 1 teaspoon vanilla extract 2 tablespoons raw honey ¼ teaspoon stevia powder 3 cups ice cubes (1 tray) 1 cup fresh cherries, pitted and chopped

Directions:

Add all the ingredients, except the cherries in the order listed above in a Vitamix™ or other high-speed, high-powered blender. Start on the lowest-variable setting and quickly increase to 10 and then to high speed. Use a tamper to press the ice cubes into the blades. Four mounds will appear in the ice cream when it is frozen. Stop the machine as soon as the ice cream is smooth. Toss in the chopped cherries. Turn the blender on low speed just long enough to stir the fruit into the ice cream without pulverizing it. Serve immediately.
